Augustines Apple Cake Recipe

Enjoy Gus’s favourite apple cake recipe whenever you crave cake (our 2-year old son insists on apple cake daily).

We've been making delicious apple cakes using fresh apples from our orchard valley. To enjoy this recipe year-round, you can switch out the apples to any of our Augustines Preserved Fruits.

Ingredients: 

  • 3 apples (alternatively, you can use any of Augustines Preserved Fruits, but please drain and pat them dry with a paper towel)

  • 150 g butter or margarine

  • 150 g sugar

  • 1 pinch of salt

  • 2 eggs (size 6 – medium)

  • 2 tablespoons of custard powder

  • 250 g flour

  • 3 level teaspoons of baking powder

  • 5 tablespoons of milk

  • Icing sugar for dusting

Method:

1. Peel, quarter, core, and dice the apples (if using cooking apples they will quickly brown - sprinkle with lemon juice to avoid discolouration).

2. Cream butter, sugar, and salt. Beat in the eggs one at a time. 

3. Sift dry ingredients (custard powder, flour, and baking powder). 

4. Fold in the flour mix and milk alternately to make a batter. When just mixed fold the apples.

5. Pour the batter into a greased and floured springform pan (26 cm diameter) and smooth the top. 

6. Bake in a preheated oven 175 °C (fan-bake 150 °C) for about 45 minutes. If using a 22 cm pan it will be a higher cake and will require more cooking time. Check with a skewer.

7. Remove the apple cake from the oven, let it cool on a wire rack, and then remove it from the pan. 

8. Dust with icing sugar.
